Somewhere Over the Rainbow Candy Cupcakes

These delicious rainbow candy cupcakes combine three of children’s favorite things all into one fun treat! 

In just a few easy steps anyone can make this bright colored desert in no time at all with items found in your pantry. 

Fluffy rainbow colored cupcakes filled with candy and topped with colorful buttercream icing. 

They are just as delicious as they look and are sure to put a smile on all the little ones faces! 

 

Somewhere Over the Rainbow Candy Cupcakes

Makes 18 cupcakes.

Ingredients

1 box vanilla cake
2 teaspoons vanilla extract
food coloring in at least 4 colors
candy (hard candy works best.  No gummy candy)

Preheat the oven to 350
Mix the boxed cake mix according to the instructions on the back of the box.  Add in the vanilla extract for extra home-made flavor.
Separate the cake batter into 4 different bowls.  Add a different color of food coloring into each bowl and mix through.
Line your cupcake tray with liners.
Using a tablespoon add in a scoop of each color, in layers, into each cupcake liner. 
Cook according to the directions on the back of the box, approx 25 minutes.
Remove the cupcakes from the oven and cool on a wire rack.

Buttercream Icing

1/2 cup butter
2 tablespoons vanilla extract
1 tablespoon cream
2 cups icing sugar
food coloring (at least 3 colors)
Large Ziploc bag
piping tip

Directions

Mix the butter, vanilla and icing sugar and cream in a large bowl. 

Add more icing sugar and cream as needed until desired consistency is formed. 

Separate the icing into 3 bowls and add a different color of food coloring into each bowl. 

Mix through.

Snip the tip off the Ziploc bag and insert the piping tip. 

Place a piece of tape around the outside of the bag where it meets the tip to prevent it from slipping. 

(I use the Ziploc bag over the piping bag for this recipe as it makes it easier to insert the layers of icing while keeping it from mixing together allowing for the rainbow look of the icing on the cupcakes.)

Assembly

Take your cooled cupcake and use a cupcake corer to remove the middle of the cupcake. 

Fill with candies. 

I highly recommend not using gummy candies as they will go soggy in the cupcake.

Place the piece of cupcake you removed with the corner back into the cupcake hole to fill it up.  This will prevent the icing from turning your candy gooey.

Squeeze the icing out of the baggie into a bowl until more than one color comes out.

Pipe your icing on the top of your cupcakes.

Decorate with candies, luster dust, or edible sprinkles!
