Spanish Chicken Taquitos

Serves 6-8

Ingredients:

1 dozen of corn tortillas

1 pound of cooked chicken, shredded

1 cup of cheddar cheese, shredded

¼ cup of onions, diced

1 clove of garlic

Salt and pepper to taste

Sour cream for garnishing

Directions:

Preheat oven to 400 degrees.

In a mixing bowl, combine chicken, cheese, onions, garlic, salt and pepper and mix well. In a frying pan with hot oil, dip tortillas in oil and place on a paper-towel lined plate.

Spread a heaping tablespoon of the chicken mixture into the tortilla center and roll up.

Bake in the oven until browned and serve with sour cream.

Mediterranean Roasted Pepper and Goat Cheese Dip

Makes 4 ½ cups

Ingredients:

1 pound of bell peppers, roasted

1 jalapeno, seeded, deveined and roasted

1 pound goat cheese

¼ cup of Parmesan cheese, grated

½ teaspoon of honey

¼ cup of parsley, chopped

Salt and pepper to taste

Directions:

In a food processor or blender, add in bell peppers and jalapeno pepper.

Pulse until mixed well and then add in goat cheese, Parmesan cheese, honey, parsley, salt and pepper.

And finally, pulse again until combined well.

Spinach Dip with French Crudites

Makes 8 servings

Ingredients:

2 cups of carrots, sliced in thin strips

2 cups of bell peppers, sliced in thin strips

2 cups of celery, sliced in thin strips

2 cups of broccoli flowerets, cut into one-inch pieces

10 ounce package of frozen spinach, thawed and dried

¾ cup of plain yogurt

¾ cup of mayonnaise

Salt and pepper to taste

Directions:

To make the spinach dip, in a processor add spinach, yogurt, mayonnaise, salt and pepper and blend well until smooth.

On a serving tray, arrange the carrots, bell peppers, celery and broccoli and place the dip in the middle.
