There is nothing better in summer than strawberries.

There is something about that sweetness and color that just screams summertime.

I happen to live in an area with rural farming close by and with a strawberry field just up the road (I’m pretty lucky).

We have used strawberries in other recipes but making homemade Fresh Strawberry Bread  is a unique way to enjoy the sweet treat.

Add some butter or oil to dip on and it makes a perfect breakfast or snack.

Homemade Strawberry Bread Recipe

Yields: 2 loaves (9 x 5” pan)

Prep: 30 minutes | Bake: 50 minutes | Total: 1 hour 20 minutes

  1. 2 cups fresh strawberries (product of your strawberry picking adventure)
  2. 3 1/8 cups flour – all-purpose works (option: substitute whole wheat flour)
  3. 2 cups white sugar Option:change to 1-3/4 cups white sugar and 1/4 cup brown sugar (I’m a big fan of this flavor like sweet bread) 
  4. A tablespoon ground cinnamon
  5. One teaspoon salt
  6. A teaspoon baking soda (make sure the baking soda is fresh not dated)
  7. 1 ¼ cups vegetable oil
  8. 4 eggs, beaten
  9. 1 ¼ cups chopped pecans

Cream Cheese Option: 

Add 3 oz cream cheese softened to room temperature to your wet ingredients.

Sour Cream or Yogurt Option:

Add 1/4 cup sour cream or greek yogurt to your wet ingredients. Some believe that sour cream or greek yogurt is required to ensure the bread rises properly.

Fruit Option: 

This is a great breakfast easy strawberry bread recipe that can be changed by substituting the strawberries for 2 cups of berries or your favorite fresh fruit (chopped). Since this recipe makes two loaves, one can be frozen to enjoy at a later date.

Directions:

  1. Preheat oven to 350 degrees F. Grease two 9 x 5” large loaf pans.
  2. Slice strawberries and place in medium bowl. Coat juicy strawberries with sugar and set aside in a separate bowl while preparing batter.
  3. Combine flour, sugar, cinnamon, salt and baking soda in a large bowl; mix well.
  4. Blend oil and eggs into strawberries.
  5. Add strawberry wet ingredients mixture to flour mixture, blending until dry ingredients are just moistened. Stir in pecans. Divide batter into bread pans.
  6. Bake in preheated oven for 50 minutes cooking time , or until a toothpick inserted in the center of each loaf comes out clean.
  7. Remove loaf pans and place on a wire rack to cool 

Glaze Topping Option:

There are a number of creative recipes available that call for a glazed topping to provide both visual and taste appetizer. Try powdered sugar, butter and milk and perhaps some Strawberry jam for extra flavor. Drizzle the mixture over the top of the bread and you have a stunning visual presentation.

Finally you can serve your homemade strawberry quick bread on a beautiful platter and enjoy with some strawberry butter.

You can make extra mixture next time and use it as a muffin recipe.

Tip: You can change this recipe to Strawberry Banana Bread by simply adding 2 or 3 large bananas.
