Easy Chicken Quesadillas Recipe

There are so many wonderful traditional Mexican recipes that we love.

I am not sure that this is exactly traditional but we love it anyways.

Our Guacamole recipe is a hit with everyone.

And this fantastic recipe for Smothered Burritos with Red Sauce and Queso recipe will become a family favorite.

Each slice can be totally different from the others just by mixing up the toppings.

INGREDIENTS

  • 6 boneless, skinless chicken breasts (or you can use a bag of pre-cooked chicken)
  • Shredded cheese of choice (I used Mexican)
  • Flour Tortillas
  • Butter, Butter spray or Olive oil spray

Toppings (Optional):

  • Sour cream
  • Salsa
  • Chives, chopped 

DIRECTIONS

  1. Cut the chicken breasts into small square pieces.
  2. Cover the bottom of a frying pan with enough Olive oil to cook chicken.
  3. Cook until thoroughly done, about 30 minutes.
  4. Once chicken is done, put butter or spray the pan with butter spray or olive oil spray so you can ‘toast’ one tortilla.
  5. Add cheese and then chicken on top of the tortilla in the pan, and cover with another tortilla.
  6. Flip the quesadilla and spray the pan again and brown the other tortilla.
  7. Cut with a pizza cutter and top as desired.

I used sour cream and salsa as my toppings.

You can also add chopped chives.
