This savoury breakfast bake combines sausage, peppers, onion, eggs, bread dough, and cheddar in one casserole. It works for breakfast, brunch, or a simple family dinner.
Ingredients
- 8 to 10 ounces bulk breakfast sausage, or sausage removed from its casing
- 1/2 green bell pepper, diced
- 1/2 orange or red bell pepper, diced
- 1/2 yellow onion, diced
- 2 large eggs
- 1/4 cup milk
- 1 loaf frozen bread dough, thawed and proofed according to the package
- 1/4 teaspoon each salt and black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1 cup shredded cheddar cheese
Instructions
- Heat the oven to 350°F (175°C) and butter a casserole dish.
- Cut the proofed bread dough into bite-size pieces, roll them into balls, and arrange them in the dish. Bake for 10 minutes.
- Meanwhile, cook the sausage with the diced peppers and onion until the sausage is browned and cooked through and the vegetables have softened. Drain excess fat if needed.
- Whisk the eggs, milk, salt, pepper, paprika, and garlic powder together.
- Spoon the sausage and pepper mixture over the partially baked bread. Pour the egg mixture evenly over the casserole and top with cheddar.
- Bake for about 20 minutes, or until the centre is set and a food thermometer confirms the egg dish has reached 74°C (165°F).
- Rest for 5 minutes before serving. Refrigerate leftovers promptly and reheat them to 74°C (165°F).
Make-ahead tip
Cook the sausage and vegetables the night before, cool them quickly, and refrigerate in a covered container. Assemble the casserole shortly before baking so the bread keeps a better texture.
