Southwestern Breakfast Bake

A serving of southwestern breakfast bake

This savoury breakfast bake combines sausage, peppers, onion, eggs, bread dough, and cheddar in one casserole. It works for breakfast, brunch, or a simple family dinner.

Ingredients

  • 8 to 10 ounces bulk breakfast sausage, or sausage removed from its casing
  • 1/2 green bell pepper, diced
  • 1/2 orange or red bell pepper, diced
  • 1/2 yellow onion, diced
  • 2 large eggs
  • 1/4 cup milk
  • 1 loaf frozen bread dough, thawed and proofed according to the package
  • 1/4 teaspoon each salt and black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1 cup shredded cheddar cheese

Instructions

  1. Heat the oven to 350°F (175°C) and butter a casserole dish.
  2. Cut the proofed bread dough into bite-size pieces, roll them into balls, and arrange them in the dish. Bake for 10 minutes.
  3. Meanwhile, cook the sausage with the diced peppers and onion until the sausage is browned and cooked through and the vegetables have softened. Drain excess fat if needed.
  4. Whisk the eggs, milk, salt, pepper, paprika, and garlic powder together.
  5. Spoon the sausage and pepper mixture over the partially baked bread. Pour the egg mixture evenly over the casserole and top with cheddar.
  6. Bake for about 20 minutes, or until the centre is set and a food thermometer confirms the egg dish has reached 74°C (165°F).
  7. Rest for 5 minutes before serving. Refrigerate leftovers promptly and reheat them to 74°C (165°F).

Make-ahead tip

Cook the sausage and vegetables the night before, cool them quickly, and refrigerate in a covered container. Assemble the casserole shortly before baking so the bread keeps a better texture.
