Easy Chicken Quesadillas Recipe
There are so many wonderful traditional Mexican recipes that we love.
I am not sure that this is exactly traditional but we love it anyways.
Our Guacamole recipe is a hit with everyone.
And this fantastic recipe for Smothered Burritos with Red Sauce and Queso recipe will become a family favorite.
Each slice can be totally different from the others just by mixing up the toppings.
INGREDIENTS
- 6 boneless, skinless chicken breasts (or you can use a bag of pre-cooked chicken)
- Shredded cheese of choice (I used Mexican)
- Flour Tortillas
- Butter, Butter spray or Olive oil spray
Toppings (Optional):
- Sour cream
- Salsa
- Chives, chopped
DIRECTIONS
- Cut the chicken breasts into small square pieces.
- Cover the bottom of a frying pan with enough Olive oil to cook chicken.
- Cook until thoroughly done, about 30 minutes.
- Once chicken is done, put butter or spray the pan with butter spray or olive oil spray so you can ‘toast’ one tortilla.
- Add cheese and then chicken on top of the tortilla in the pan, and cover with another tortilla.
- Flip the quesadilla and spray the pan again and brown the other tortilla.
- Cut with a pizza cutter and top as desired.
I used sour cream and salsa as my toppings.
You can also add chopped chives.
