Smothered Burritos with Red Sauce and Queso
Prep Time: 30-40 minutes
Cooking Time: 45 minutes
- 2.5 lbs Ground Beef
- 3 large flour tortillas
- 1/4 cup red onion, diced
- 1/4 cup red pepper, diced
- 1/2 cup Russet potatoes, cubed
- 3 tablespoons cilantro, chopped
- 3 whole roasted green chiles
- 2 tablespoons Anaheim pepper, chopped
- 1 cup Mexican red sauce
- 12 ounces Sofrito sauce
Directions:
- Brown ground beef, drain off excess grease, set aside
- Cook cubed potatoes until browned, and the tines of a fork can pass easily through the potato, so set aside.
- Saute red onion and set aside.
- Saute red pepper and set aside.
- In a large bowl, combine ground beef, red onion, red pepper, russet potatoes, cilantro, Anaheim peppers, and Mexican red sauce. Mix well.
- Take a large flour tortilla and add 1/2 cup of ground beef mixture, add one whole roasted green chili and cheese. Fold into a burrito and place in a 10″ x 13″ baking dish. Repeat the process with additional flour tortillas.
- Cover tortillas with Sofrito sauce and bake in a 350-degree oven for 45 minutes.
- Remove from oven and spoon cheese sauce (recipe below) over burritos.
- Serve.
Smothered Burritos with Red Sauce and Cheese Sauce Recipe (Queso)
Ingredients:
- 1 cup Country Fresh DairyPure whole milk
- 1/4 cup Mexican cheese, shredded
- 2 tablespoons of all-purpose flour
- 1 tablespoon unsalted butter
- 2 tablespoons cilantro, chopped
- Sea salt, to taste
- Black pepper, to taste
Directions:
1. In a sauce pot over medium heat melt butter, after butter is melted add flour and stir until smooth.
2. Remove the pot from direct heat and slowly add the milk. When all the milk is added, return the sauce pot to direct medium heat and continue to stir until the mixture begins to bubble.
3. Reduce heat to low and gradually add shredded cheese. Continue to stir until the cheese is well incorporated into the pot. Add chopped cilantro and stir until well-mixed.
4. Add salt and pepper to taste.

Hello! I have a few questions about this drool-worthy recipe. 1. I see beans in the pictures, but not listed in the ingredients or directions. 2. How much cheese is used for the burritos? (It’s mentioned in the directions, but not listed in the ingredients.) 3. Is it really 2.5 pounds meat (plus additional meat-mixture ingredients) but only 1/2 cup meat mixture per burrito? 4. Mexican red sauce? Is that the same as enchilada sauce, or, if not, can you recommend a brand or 2 so I know what to look for? Thanks so much!
