Molasses Cookie Sandwiches

Try using vanilla ice cream instead, yum!

Molasses Cookie Sandwiches is a traditional, holiday recipe. If you do not use the filling you can use the individual cookies and immediately double the recipe without any extra work.  This recipe use blackstrap molasses to give them a full flavor!

Molasses Cookie Sandwiches

Ingredients

1 cup brown sugar, packed
1 1/2 stick butter
1/2 cup blackstrap molasses
1 large egg
2 1/4 all purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 all spice
1/4 teaspoon salt
3 tablespoons granulated sugar
Whipped frosting of your choosing

Instructions

Pre-heat the oven to 325
In a medium bowl, beat the brown sugar, butter, molasses and egg together until smooth
In a second bowl, combine the flour, baking soda, salt and all spices, sift together (if you do not have a sifter you can use a fork)
Slowly add the flour mixture to the molasses mixture, stir until all ingredients are incorporated
Spoon cookie dough onto a cookie sheet and sprinkle with granulated sugar
Bake for 13-15 minutes or until edges are golden brown

Let the cookies cool completely on a cooling rack.
Frost one cookie and top with another! Devour!
