It’s cherry season in BC, and you know what that means – cherry pies are coming!
But not just cherry pie – there is cherry topping, cherry cheese danishes… cherries all day!
To maximize the use I get out of our local cherries I make this easy cherry pie filling and use it in a bunch of recipes.
I am a huge cherry lover .
It’s one of my favorite fruits, but the thing is, I never make pies.
Why?
Because I eat all the cherries before I get a chance to make anything.
But this May long weekend I will pick up some fresh bing cherries from the Okanagan and make an easy cherry pie filling before I eat them all.
You only need four ingredients to make this easy cherry pie filling – believe me, it’s so simple to make and you can use it for more than just a pie filling.
Easy Cherry Pie Filling Recipe
What you will need:
- 4 cups washed, pitted Bing cherries
- 1 cup granulated sugar
- 1/4 cup cornstarch
- splash of lemon juice
Place cherries into a sauce pan, and over medium heat, heat the cherries until they release their juices. 10 – 15 minutes. Be sure to stir.
Mix sugar and cornstarch together to make sure there are no clumps.
Add to cherries and stir constantly until the mixture thickens.
Approx. 5 – 7 minutes.
Add in lemon juice, stir and voila!
Store in a container with a good sealing lid. Use in pies, danishes, or even on ice cream!
I recommend mason jars or Ball plastic jars that can be frozen. You can make pie filling now and freeze for later.
If you are cherry obsessed like I am you will want to wear a cute cherry apron while making your easy cherry pie filling.
