These are my two favorite parts of the day: breakfast and dessert. The recipe I found is Overnight Pumpkin Cheesecake French Toast.
I then adapted it to make an Overnight Strawberry Cheesecake French Toast as I thought the red in the strawberries would be prettier.
Many people have family and guests come into town and stay overnight for Thanksgiving and Christmas, and they would like to be able to give them a hot breakfast the next day.
However, they must also prepare the main meal later in the day.
Here is a perfect solution!
You can make this french toast casserole the night before and put it in your refrigerator.
The following day, take it out and bake it voilà: you have a hot breakfast!
Because your family and guests have a full tummy, they will not keep bugging you to eat or asking, “When will dinner be ready?”

Since my kids don’t love pumpkins, I adapted them and put strawberries in them.
It would look even prettier if I sprinkled fresh strawberries on the top and then had a cool whip on the table for a topping.
Most of my kids still didn’t care for it; they were the fussiest kids ever.
But my Sunday School class liked it, and one lady took the rest home for her family. My kids’ loss is their gain!

I love breakfast casseroles.. they might take a little time to prepare the night before but you make up for it with extra quality time the next morning.
I agree! The next morning you are SO thankful! And we often eat a little later on holidays, so feeding the kids (and husband) in the morning keeps them from nagging!
