I live in an area with rural farming nearby and a strawberry field just up the road (I’m pretty lucky).

We have used frozen strawberries in other recipes, but making homemade Fresh Strawberry Bread is a unique way to enjoy the sweet treat.

This Fresh Strawberry Bread is soft, moist, and bursting with the natural sweetness of fresh strawberries.

It is perfect for breakfast, brunch, or dessert.

This quick bread is easy to make and pairs beautifully with whipped cream and butter or cream cheese.

Ingredients:

Yields: 2 loaves (9 x 5” loaf pan)

Prep: 30 minutes | Bake: 50 minutes | Total: 1 hour 20 minutes

  • 2 cups fresh strawberries (product of your strawberry-picking adventure)
  • 3 1/8 cups flour – all-purpose works (option: substitute whole wheat flour)
  • 2 cups white sugar Option: change to 1-3/4 cups white sugar and 1/4 cup brown sugar (I’m a big fan of this flavor, like sweet bread)
  • A tablespoon of ground cinnamon
  • One teaspoon salt
  • A teaspoon of baking soda (make sure the baking soda is fresh, not dated)
  • 1 ¼ cups vegetable oil
  • 4 eggs, beaten
  • 1 ¼ cups chopped pecans

Instructions:

  • Preheat your oven to 350°F (175°C), grease a 9×5-inch loaf pan, or line it with parchment paper.
  • Whisk together the flour, baking soda, baking powder, salt, and cinnamon in a large bowl.
  • Combine sugar, oil, eggs, and vanilla extract in a medium bowl. Mix until smooth. Stir in sour cream or Greek yogurt until fully combined.
  • Gradually fold the wet ingredients into the dry ingredients, mixing until combined. Gently fold in diced strawberries, being careful not to overmix.
  • Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake for 50–60 minutes or until a toothpick inserted into the center comes clean.

Cream Cheese Option: 

Add 3 oz cream cheese softened to room temperature to your wet ingredients.

Sour Cream or Yogurt Option:

Add 1/4 cup sour cream or Greek yogurt to your wet ingredients. Some believe this is required to ensure the bread rises appropriately.
