I love making this easy spring roll bowl when we are short on time. Not only is it delicious, but its simple to make and is ready to serve in about 30 minutes. To save on time, I use a bag of coleslaw mix- the one with the green and purple cabbage, along with carrots. You can use whatever you want, we just really like this combo. Also, ground pork is easy to cook with and makes it easy to toss this meal together.
I like to make a bit extra for lunches the next day, its that good. If you are looking for a delicious and quick meal, look no further.
What you will need:
- 1 lb ground pork
- 2 Tbsp. canola oil
- half a bag of coleslaw (the one that has carrots and purple cabbage)
- 1 small onion; diced
- 1/4 cup soy sauce
- 2 tsp. sesame oil
- 3 cloves of garlic; minced
- 1 tsp. ginger
- 1 tsp. granulated sugar
- 1 tsp. rice wine vinegar
- 1 tsp fish sauce
- salt and pepper
- 4 cups cooked rice
Preparation:
In a frying pan add the oil and pork and cook until the pork is browned. Toss in the onion and continue to cook.
Place the soy sauce, sesame oil, garlic, ginger, sugar, vinegar, fish sauce and salt and pepper into a small bowl and stir well.
Add the cabbage to the pork mixture along with the sauce and continue to cook just until the cabbage starts to wilt.
Serve over cooked rice or noodles (if you like)
