My apologies to your girlish figure, but I figured out how to make an easy cracker toffee recipe in a mug!
I’m fascinated with single-serve mug desserts, but we don’t have a microwave, so I haven’t had many chances to experiment.
However, this summer, we lived in an apartment that had one while traveling for work; we are living with my parents while we house hunt, and they have one, too.
Opportunity abounds! I love to make a bedtime snack; someday, I’ll need to figure out some healthy versions.
Today, alas, is not that day.
This recipe is quick and easy; adjust to taste!
However, if you use less sugar, your crackers may not be crunchy.
My Grammie taught me to make the original recipe years ago before it became popular on Pinterest!
We lost her this month, so I’m happy that I created this just in time to post it in her honor.

Easy Cracker Toffee Recipe In A Mug

Ingredients
2 T butter
2 T brown sugar
8-10 crackers
Chocolate chips (optional)
Chopped almonds (optional)
Instructions
- Place butter and brown sugar in a mug and microwave for 30 seconds
- Stir and microwave for another 30 seconds. Should be visibly thickened and very hot.
- Crumble crackers in and stir.
- If desired, add chocolate and/or nuts
- Enjoy
Notes
Let it cool a little bit before eating! I usually eat this warm, as opposed to the full-size version, which is eaten when cooled.
