If you haven’t tried making your own hot sauce now is the time. This delicious and very simple recipe will take you less than an hour from start to finish and the flavor stands on its own compared to store bought brands. What I love about making hot sauce from scratch is that you can make it to suit your spicy needs. A key note to keep in mind when choosing your peppers is that the brighter they are, the spicier they are! Green is a more mild heat, yellow and orange are in the middle, and red peppers will be very spicy! This recipe can be used with any peppers that you choose.
Please make this recipe in a well-ventilated area with a good fan and open windows.
Homemade Hot Sauce
Ingredients
20 chiles, chopped up, including seeds. Remove stems.
(or a dozen red chiles, jalapenos)
2 tablespoons crushed/minced garlic cloves
1 teaspoon salt
3/4 onion, chopped fine
1 teaspoon vegetable oil
2 cups water
1 cup vinegar
Directions
Be sure to have all your peppers cut! Use gloves for the hotter peppers. Place into saucepan over high heat with the onions, garlic, salt, and oil.
Saute for 3-5 minutes.
Add the water to the pan and stirring occasionally let it simmer for 25-35 minutes or until most of the water has evaporated from your pan. You don’t want to burn the peppers so keep your eye on them.
Note – make sure your fans are on for this part of the process!
Remove from heat and set aside to cool to room temperature.
Once cooled place your pepper mixture into a food processor and pulse for 20 seconds. Slowly add the vinegar through the pour spout and blend thoroughly.
Using a fine sieve to strain the hot sauce through to catch the seeds and skin that didn’t puree. Pour your hot sauce into a sterilized jar or bottle and cap it. Place in the fridge for 2 weeks before using for the perfect flavor.
Can be stored in the fridge for up to 6 months.

Thanks for this recipe! I looked into making our own hot sauces since my middle son LOVES hot sauce on EVERYTHING. The commercial sauces take a LONG LONG time so I didn’t think homemade was an option. I’m going to give your recipe a try though.
