Molasses Cookie Sandwiches Recipe
Ingredients
- 1 cup brown sugar, packed
- 1 1/2 stick butter
- 1/2 cup blackstrap molasses
- 1 large egg
- 2 1/4 all purpose flour
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/2 all spice
- 1/4 teaspoon salt
- 3 tablespoons granulated sugar
- Whipped frosting of your choosing
Instructions
Pre-heat the oven to 325
In a medium bowl, beat the brown sugar, butter, molasses and egg together until smooth
In a second bowl, combine the flour, baking soda, salt and all spices, sift together (if you do not have a sifter you can use a fork)
Slowly add the flour mixture to the molasses mixture, stir until all ingredients are incorporated
Spoon cookie dough onto a cookie sheet and sprinkle with granulated sugar
Bake for 13-15 minutes or until edges are golden brown
Let the cookies cool completely on a cooling rack.
Frost one cookie and top with another! Devour!
Try using vanilla ice cream instead, yum!
