This cheesy tortellini 30 minute meal, would be awesome right after Christmas – you know to use up all that ham! Or on those nights where you need to eat and run.
My mother in law made this one night for my picky eats, and my goodness – was it ever good! I love the creaminess from the ricotta cheese, and I love the addition of ham and peas.
Cheesy Tortellini – 30 Minute Meal
If you don’t want to use ham, you could also use prosciutto. Or omit it all together, but we love ham!
What you will need:
- 1 – 500g bag frozen cheese tortellini
- 1 cup ricotta cheese
- 3/4 cup milk
- 1 Tbsp. butter
- 1/4 cup chopped green onions
- 4 slices of ham; chopped
- 2/3 cups frozen peas
- 1/2 tsp pepper
- pinch of nutmeg
- pinch of salt
- 1/4 cup grated Parmesan cheese
In a large pot of salted boiling water – cook the tortellini for 10 minutes.
In a blender, add the ricotta and milk, and blend until smooth.
In a skillet, heat butter over medium heat, add in onions and ham, and cook for 5 minutes. Stir in peas.
Add in tortellini, ricotta mixture, pepper, nutmeg and salt. Heat through – when ready to serve, stir in Parmesan cheese.
Serve.
This cheesy tortellini meal is a quick and simple dinner to throw together – it was a hit with my boys!
