I am always looking for quick dinner ideas for those nights where dinner needs to be cooked, served and eaten within an hour.
Stir fry’s are my go to meal when we are in a rush. You get a great serving of vegetables, a protein, and a tasty sauce. Sometimes I like to throw in some noodles as well, but this quick and easy mandarin chicken stir fry is amazing just on its own.
What you will need:
- 2 Tbsp. canola oil
- 2 boneless, skinless chicken breasts; sliced thin or cubed
- 1 can baby corn; drained
- 1 good handful of snow peas
- 1 large carrot; cut in half lengthwise, diced
- 2 fresh mandarin oranges; segmented*
- 1 package of Mandarin Orange Stir-Fry sauce – can be found at your local grocer.
Heat oil over medium heat in a wok or large frying pan. Toss in the chicken and cook until browned. About 5 – 7 minutes.
Add in the vegetables and continue to cook for another 5 minutes or so. Stir in sauce and add orange segments. Stir to combine.
You can serve this with rice, or noodles.
That’s it!
You could totally sub out the chicken and use tofu instead (or beef) but I loved the combination of orange and chicken together. The fresh snow peas added a great touch as well.
