What To Do With Leftover Rice

Rice Pudding

Ingredients:

1 cup of brown rice

3 cups of almond milk

1 cup of almond milk

1 teaspoon of vanilla

½ teaspoon of cinnamon

2 tablespoons of coconut palm sugar

Directions:

Mix all the ingredients except the 1 cup of almond milk in a rice cooker. Set the timer of the cooker to brown rice and allow to cook until the timer shuts off. Add in the cup of almond milk, stir and serve hot.

Brown Rice and Kale Salad

Ingredients:

3 handfuls of mixed baby leaves

2 small green kale leaves, chopped

1 cup of cooked brown rice

½ chopped cucumber

4 plum tomatoes, sliced

2 avocados, chopped

2 hard-boiled eggs

Directions:

In a bowl, add the mixed baby leaves and kale leaves. Add the rice over the leaves and then top with cucumber, tomatoes, avocados and eggs.

Stuffed Tomatoes with Rice

Ingredients:

4 large tomatoes

2 tablespoons of olive oil

½ cup of diced onion

2 cups cooked rice

1/3 teaspoon of allspice

Salt and pepper to taste

Directions:

Preheat oven to 350 degrees. Cut the tops of the tomatoes and scoop out the insides using a small knife. In a frying pan, with olive oil, sauté the onions until soft. In a large bowl, mix together the rice and allspice along with the onions. Scoop the mixture into each of the tomatoes and pack lightly. Place stuffed tomatoes into a baking dish and cook for 25 minutes.

Zucchini and Rice Salad

Ingredients:

2 cups of cooked rice

1 medium zucchini, sliced

1 cup of spinach, finely chopped

½ cup of parsley, finely chopped

Juice from 1 lemon

1 tablespoon of olive oil

1 tablespoon of water

Black pepper to taste

Directions:

In a large bowl, mix together cooked rice, zucchini, spinach and parsley. In a separate bowl, whisk together the juice from the lemon, olive oil and water. Season dressing with black pepper and drizzle over salad. Toss gently so dressing coats the entire salad.
