Step 1: Wash your fresh produce thoroughly with water.

Pat dry the meat, using the paper towel before seasoning it with salt and pepper.
Then, warm 3 tsp. of oil until hot enough in a large frying pan over medium-high heat.
Thereafter, add pork and cook for about 10 minutes, making sure to turn it often.
Transfer cooked pork to a plate.
Step 4: Prepare the remaining sauce ingredients and finalize the sauce;
Trim the ends from the scallion and slice the vegetable thinly. Tip: be sure to allocate some green parts of it(about 1 tsp) for your garnish.
Chop the olives coarsely, making sure to check for any pits
Measure ½ tsp oregano for the sauce; saving the rest for separate use.
Stir in the scallion slices plus the remaining garlic, cooking the mixture in the same pan you used for the pork for about 30 seconds. Tip: use medium heat.
Lower the heat and add the chopped olives, vinaigrette, ½ tsp oregano, and remaining parsley.
Cook the mixture for about 2 minutes or until the formation of a slightly thickened sauce.
Remove sauce from the heat, seasoning it with salt and pepper to taste.
Step 5: Serve and enjoy while still warm!!!
Transfer the cooked pork to individual plates.
