Sometimes as a mom you don’t always get time to stop and eat a meal, you could be starving, stomach growling and aching, but you need to get on the road to pick up or drop off one of your kids.
I’m not a smoothie person.
I do not like throwing vegetables into a blender or juicer and drinking them.
It could be really beneficial health-wise but I just can’t bring myself to do it, yet anyway.
This peanut butter smoothie (cooler) calls to me on so many levels.
Peanut butter, chocolate (cocoa) and coffee.
All three are my favorite things, things that are always in our house, and are often in everyone’s house.
I think.

Peanut Butter Smoothie (Cooler) Recipe
Start by digging out your blender from whatever dark corner of the cupboard where it is hiding in :).
Start with 6 ice cubes in your blender.
I like to pulse it a few times, to crush them a bit.
Add the rest of the ingredients, the milk, cocoa, peanut butter, coffee, brown sugar and vanilla.
Blend. Pour into your favorite cup and add a straw, or forgo a straw if you’d like.
In the summer I keep a insulated tumbler in the freezer for the added chill.
This can be my lunch on the go, a pick me up snack that I can enjoy in the backyard playing with my kids.
Speaking of kids, my girls love this. I don’t add the coffee to theirs, just because they don’t need that boost in energy.
