Parmesan Zucchini Rounds

Did you know that zucchini is technically a fruit? While it’s treated like a vegetable, it’s actually a fruit. – random fact of the day. 

I like to use zucchini’s in my savory dishes, as well as in my baking, but today I am showcasing them as little golden zucchini rounds of deliciousness. 

Who doesn’t like deep fried zucchini sticks? I know I do, so here is my take on the traditional zucchini sticks. It doesn’t take much to make these, and they are quite simple to make, and taste amazing. 
Parmesan Zucchini Rounds Recipe

What you will need:

  • 1 large zucchini; cut into 1/4 inch rounds
  • 1/2 cup all purpose flour
  • 1 tsp. ground pepper
  • 2 large eggs; beaten
  • 1 cup panko bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp. salt
  • oil for frying

You will need three shallow dishes to get your dredge station ready.

In one pan place the flour and pepper and give it a stir. Put the beaten eggs in another shallow dish, and in the final dish place the panko, Parmesan cheese and salt.

Heat oil in a large pan. I use about a cup and a half of oil for shallow frying.

Dredge a small batch of zucchini rounds into the flour. Then into the egg and finally into the panko breading. make sure they are coated.

Fry on medium heat in the pan until golden brown. About 4 minutes. Remove from oil and place on paper towel to drain.

Repeat until all the zucchini is used.

Serve with your favorite dipping sauce. I like ranch!

These make a great little appetizer at dinner parties, or BBQ’s. They are ridiculously addicting and are somewhat healthy. In our house, these do not last long! You can experiment with different seasonings if you like as well. Spice them up by adding some Frank’s Hot Sauce to the egg mixture, or try adding some of your favorite spices to the panko breading.
