One of my favorite things at any Japanese Steak House is the Japanese Onion Soup.

It is so light and refreshing.

This delicious appetizer is almost impossible to find here in Germany.

So, I decided to make my own. 

Japanese Onion Soup Recipe

INGREDIENTS

  • cups beef broth
  • cups chicken broth
  • large carrot
  • medium onion, chopped
  • garlic cloves, crushed
  • green onion, thinly sliced
  • mushroom, thinly sliced
  • tablespoon Durkee onions – optional

DIRECTIONS

  1. Combine beef and chicken stock in a pot.
  2. Add carrot, onion and garlic.
  3. Bring to a boil, lower heat, cover pot and simmer for 30 minutes.
  4. Discard the carrot, onion and garlic and strain the soup through cheesecloth.
  5. Place a small amount of each of the green onions, mushrooms and french fried onions (if using) in serving bowls and ladle the broth over them. Serve.
