Rainbow Fruit and Cheese Platter

Ingredients:

3 quarts of strawberries, sliced in halves

½ pint of raspberries

6 cups of seedless watermelon, cut into chunks

3 oranges, peeled and cut into wedges

5 cups of pineapple, peeled, cored and cut into chunks

½ pound of green grapes

¼ pint of blueberries

1 pound of cheddar cheese, cut into cubes

Directions:

On a large oval serving platter, align the strawberries to make the top of the rainbow. Then, layer raspberries underneath, followed by watermelon, oranges, pineapple, grapes and blueberries. At the bottom of the rainbow, arrange the cheese cubes to look like a pile of gold.

Apples, Pears and Cheese Nacho Platter

Ingredients:

2 Granny Smith apples, sliced

2 pears, sliced

½ cup of sharp cheddar cheese, cut into cubes

3 tablespoons of caramel sauce, warmed

1 ½ ounces of walnuts

Handful of raisins

Handful of coconut, shredded

Directions:

Layer slices of apples and pear on a serving platter. Add the cheese cubes in between the fruit, then drizzle with caramel sauce and sprinkle walnuts, raisins and coconut on top.

Elmo Fruit and Cheese Platter with Fruit Dip

Ingredients:

1 quart of strawberries, sliced

1 pint of blueberries

½ cup of cheddar cheese, cubed

1 cup of vanilla yogurt

Half a container of whipped topping

Directions:

Using a round serving platter, place two white ramekins for the eyes and one for the nose. Fill in the strawberries around the three ramekins, leaving space below the ramekin used for the nose. Add the cheese cubes to the nose ramekin and create a crescent shaped mouth with the blueberries. In a small dish, combine the yogurt and the whipped topping and mix together well. Add the fruit dip to the two ramekins used for the eyes. Place a blueberry in each one of these ramekins for Elmo’s pupils.
