Nothing beats a fresh, homemade cookie. These white chocolate & macadamia nut cookies are soft, chewy and super simple to make. They taste better than the store bought ones, and really take no time at all to bake.

What you will need:
- 1/2 cup butter; softened
- 1/2 cup vegetable shortening
- 1 cup packed brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp. French vanilla extract
- 2 3/4 cup all purpose flour
- 1/2 tsp. baking soda
- good pinch of salt
- 1 (225g) bag of white chocolate chips
- 2 cups coarse chopped macadamia nuts
Pre heat oven to 375 degrees F. and line two large cookie sheets with parchment paper.
Cream together the butter and shortening. Add in the sugars and blend until incorporated. Add in the eggs and vanilla and mix again.
Mix together the flour, baking soda and salt – add to the wet ingredients and stir well until combined. Fold in the chocolate chips and the nuts.
Drop by Tbsp. onto the lined sheets and bake in the oven for 8 – 9 minutes. Be sure to watch the edges. You want a light golden brown edge. DO NOT OVER COOK.
Remove from oven, let sit a couple of minutes and then transfer to a wire rack to cool.
Store in an airtight container.

For a special treat, sandwich a scoop of vanilla ice cream between two cookies for an even sweeter treat!
