What to do With Leftover Chicken

If you are left with some leftover chicken from Sunday’s dinner, there are some great recipes you can make. You can make great meals like salads, quesadillas and baked chicken with your leftover chicken.

Chicken Quesadillas

Ingredients:

½ cup of leftover chicken, shredded

½ cup of cheddar cheese, shredded

¼ teaspoon of cumin

2 flour tortillas

¼ cup of salsa

Directions:

In a bowl, mix together chicken, cheddar cheese and cumin. Add chicken mixture to one of the tortillas and then top with the other tortillas, pressing down well with a spatula. Using a warm skillet, over medium heat, cook the quesadilla for about 5 minutes or until brown. Flip the quesadilla over and cook another 4 minutes. Cut into wedges and serve with salsa.

Chicken and Bacon Salad

Ingredients:

4 slices of bacon

2 tablespoon of cider vinegar

1 tablespoon of mustard

1 tablespoon of olive oil

¼ teaspoon of salt

¼ teaspoon of black pepper

1 bag of Romaine lettuce

2 cups cooked chicken, shredded

Directions:

Using a skillet, over medium heat, cook bacon for 6 minutes or until brown. Remove bacon from pan onto paper towels to allow to drain. Empty bacon drippings from skillet except 1 tablespoon. Add vinegar, mustard, olive oil, salt and pepper to the bacon dripping skillet. Allow to boil and then remove from heat. In a large bowl, add Romaine lettuce, chicken and dressing mixture; toss to coat well. Crumble bacon and add to salad.

Chicken A La King

Ingredients:

4.5 ounce can of mushrooms, drained

1 chopped green bell pepper

½ cup of butter

½ cup of flour

1 teaspoon of salt

¼ teaspoon of black pepper

1 ½ cups of milk

1 ¼ cups of hot water

2 ½ cups cooked chicken, chopped

4 ounces of chopped pimento

Directions:

Using a skillet, over medium heat, add butter along with mushrooms and bell pepper; cook for 5-6 minutes and remove from heat. Add in flour, salt and pepper and return to heat on low. Cook until bubbly, stirring constantly then remove from heat. Add in milk and water, return to low heat and boil for 1 minute, stirring constantly. Add in chicken and heat thoroughly.
