I am a huge fan of watermelon and love Watermelon Feta Salad.
I crave it year-round.
Every year, I look forward to Panera’s Watermelon Feta Salad, and I feel intense disappointment when the season ends and it leaves the menu.
So, I decided to make my own version.
I really wanted to make the Champagne Dijon Vinaigrette that Panera serves with their salad, however, the Champagne vinegar was a bit pricey.
So, I opted for some Annie’s Lite Honey Mustard Dressing instead.
I hope you enjoy it as much as I do!
Ingredients
- 6 cups baby arugula, washed and dried
- 1/8th seedless watermelon, rind removed, and cut in 1-inch cubes
- 12 oz crumbled feta cheese
- 1 cup (4 ounces) whole fresh mint leaves
Directions
- Place the arugula, watermelon, feta, and mint in a large bowl.
- Drizzle with enough dressing to coat the greens lightly and toss well.
- Taste for seasonings and serve immediately.
