It brings back so many memories of my childhood and summer days with my sisters. 

You can add these fairly inexpensive ingredients to almost any dessert and it just brings it up ten notches on the flavor scale. 

This delectable treat adds strawberries and whipping cream right into the middle of a fluffy, moist sponge cake to make the perfect dessert for any summer day. 

It is also very easy and quick to make allowing you to spend more time with family and friends and less time in the kitchen, but they won’t know that. 

It looks and tastes like you were working away on it all day!

 

Strawberry Dream Cake Recipe

Italian Sponge Cake

6 eggs
1 cup cake flour
1 cup sugar

Cut waxed paper to fit bottom of your two 9″ cake pans and preheat your  oven to 350*

Separate eggs, putting whites in large mixer bowl and yolks in small mixer bowl then add 1/2 cup sugar to whites and beat until very stiff.

Add the other 1/2 cup sugar to the yolks and beat until very thick and light yellow in color.

Fold egg yolk mixture into egg whites then fold flour in using 1//3 cup each time until well mixed.

Do not over mix, this will cause your cake to be flat.

Pour into prepared pans.

Bake for 30 minutes or until inserted toothpick comes out dry.

Cool for a few minutes, remove from pan and remove wax paper from the bottom of your cakes.

Cool completely before decorating with whipped cream and strawberries. 

 

Strawberry Dream Cake Recipe

Filling

4 cups heavy whipped cream
5 tablespoons icing sugar
1 package whipping cream stabilizer (found in all grocery stores)
2 teaspoons clear vanilla extract
12-15 strawberries; sliced

Pour the heavy whipping cream into a bowl and beat until it starts to thicken. 

Add the icing sugar, stabilizer, and vanilla and continue to beat until thick. 

Place in the fridge until you’re ready to use.

Cut the strawberries into thin slices and place into the bowl until you’re ready to use.

 

Assembling the Cake

Depending on how much-whipped cream you like, you can do this two ways! 

One, you can cut each cake in half to create four round cakes, two, you can just leave it as a two layer cake and leave the cakes as they are. 

Using a sharp knife remove the rounded part of the top of the cake so it lays flat. 

Move your first cake layer to a flat plate or serving dish and put a thick layer of whipped cream over the top. 

Add a layer of strawberries to the top of the whipped cream.

Move the second cake layer on the top of the strawberry layer and repeat the above step until all your cake layers are gone. 

When all the cake layers have been used cover the cake in the remaining whipping cream using a spatula or a knife. 

Place more strawberry slices on the top of the cake. 

Due to the whipping cream in this cake please remember to refrigerate after serving. 

The longer it sits the more delicious it will taste. 

Good in the fridge for up to 1 week. 

Cover with a cake lid before storing.
