Smothered Burritos with Red Sauce and Queso
Prep Time: 30-40 minutes
Cooking Time: 45 minutes
- 2.5 lbs Ground Beef
- 3 large flour tortillas
- 1/4 cup red onion, diced
- 1/4 cup red pepper, diced
- 1/2 cup Russet potatoes, cubed
- 3 tablespoon cilantro, chopped
- 3 whole roasted green chiles
- 2 tablespoon Anaheim pepper, chopped
- 1 cup Mexican red sauce
- 12 ounces Sofrito sauce
Directions:
- Brown ground beef, drain off excess grease, set aside
- Cook cubed potatoes until browned and the tines of a fork can pass easily through the potato, set aside.
- Saute red onion, set aside.
- Saute red pepper, set aside.
- In a large bowl combine ground beef, red onion, red pepper, russet potatoes, cilantro, Anaheim peppers and Mexican red sauce. Mix well.
- Take a large flour tortilla and add 1/2 cup of ground beef mixture, add one whole roasted green chili and cheese. Fold into a burrito and place in a 10″ x 13″ baking dish. Repeat process with additional flour tortillas.
- Cover tortillas with Sofrito sauce and bake in a 350-degree oven for 45 minutes.
- Remove from oven and spoon cheese sauce (recipe below) over burritos.
- Serve.

Ingredients:
- 1 cup Country Fresh DairyPure whole milk
- 1/4 cup Mexican cheese, shredded
- 2 tablespoons of all-purpose flour
- 1 tablespoon unsalted butter
- 2 tablespoons cilantro, chopped
- Sea salt, to taste
- Black pepper, to taste
Directions:
1. In a sauce pot over medium heat melt butter, after butter is melted add flour and stir until smooth.
2. Remove pot from direct heat and slowing add milk. When all the milk is added return sauce pot to direct medium heat and continue to stir until mixture begins to bubble.
3. Reduce heat to low and gradually add shredded cheese continue to stir until cheese is well incorporated in the pot. Add chopped cilantro and stir until well mixed.
4. Add salt and pepper to taste.

Hello! I have a few questions about this drool-worthy recipe. 1. I see beans in the pictures, but not listed in the ingredients or directions. 2. How much cheese is used for the burritos? (It’s mentioned in the directions, but not listed in the ingredients.) 3. Is it really 2.5 pounds meat (plus additional meat-mixture ingredients) but only 1/2 cup meat mixture per burrito? 4. Mexican red sauce? Is that the same as enchilada sauce, or, if not, can you recommend a brand or 2 so I know what to look for? Thanks so much!
