This Slow Cooker Butter Chicken recipe is so full of flavor, a little spicy and absolutely delicious. Even better, you can make it well ahead of time in the slow cooker and come home to a delicious protein dish that is sure to please everyone in your home that enjoys the comfort of Indian flavors.
This recipe has a mild heat to it. If you prefer a higher heat to your food increase the amount of spices by 1/2-1 teaspoon each.
Ingredients:
3 lbs boneless/skinless chicken breast
1/2 large onion, diced
4 cloves garlic, minced
1 can coconut milk, 14 oz
2 teaspoons curry powder
1 teaspoon cumin
2 teaspoons garam masala
1/2 teaspoon cayenne powder
1/4 teaspoon powdered ginger
1 can tomato paste, 6 oz or 1 can tomato soup, 10 oz
1 teaspoon salt plus more to taste
Instructions:
Take the chicken and place it in a large slow cooker, at least 5qt, and line the bottom with the chicken.
In addition, sprinkle the spices over the top of the chicken as well as the onion and garlic.
Next, pour the coconut milk and tomato sauce or paste over the chicken mixture and stir it all together until it’s smooth in consistency and mixed through.
Finally:
Turn the slow cooker onto low and place the lid on the crockpot. Cook for five hours.
Serve with Jasmine rice or cauliflower rice and enjoy your Slow Cooker Butter Chicken!
Garnish with plain yogurt, cilantro or a squeeze of lime juice.
