Simple Snickerdoodle Cookies

Tots SnickerdoodleIt’s that time again – Christmas baking has commenced in my house, and first up are these simple snickerdoodle cookies. 

They are light and chewy – with a hint of vanilla, and a sprinkling of cinnamon sugar. These are so easy to make, and make a great gift!  I like to package these Snickerdoodle’s up with other Christmas cookies, and give them away as gifts to teachers as well as to family and friends. 

Simple Snickerdoodle Cookies

What you will need: 

  • 1/2 cup unsalted butter; softened
  • 1/2 cup granulated sugar
  • 1/3 cup packed brown sugar
  • 1 large egg
  • 1 tsp. pure vanilla extract
  • 1 1/2 cups all purpose flour
  • good pinch of salt
  • 1/2 tsp. baking soda
  • 1/4 tsp. lemon juice.

For rolling:

  • 3 Tbsp. granulated sugar
  • 1 tsp. cinnamon

In a mixer or large bowl, cream together the butter, and both sugars. Add in the egg and vanilla and mix well.

In a separate bowl sift together the flour, salt and baking soda. Add 1/2 of the dry mixture to the wet mixture and stir. Add remaining flour, as well as the lemon juice and mix well.

Set in fridge for about 20 minutes.

Preheat oven to 300 degrees F and line a cookie sheet with parchment paper.

In a small bowl, combine the sugar and cinnamon. Roll dough into 1.5 inch balls and roll in the cinnamon sugar to coat.

Place on a cookie sheet about 2 inches apart. Press with fork and bake for 12 – 14 minutes.

Remove from sheet and cool on a wire rack.

Store in air tight container.

 You are going to want to make a couple batches of these bad boys! I promise you, they are amazing little cookies. 

I plan on making a batch so the boys can leave them out for Santa Clause!
