Ingredients:

1 cup organic wheat berries (I used rye)
8 cups water
Oil for frying
Salt or your choice of seasonings for flavouring
Popcorn flavours work great and can be found at any grocery store.
Wheat berries can be found at nearly any health food store or bulk food store

Directions:

First cook the wheat berries to make them soft.

Place the wheat berries into the water in a large pot on the stove.

Bring to a boil then turn down the temperature and simmer for one hour.

Taste.

If you feel they need to be a big softer than cook until desired tenderness is reached.

Drain the water from the wheat berries and allow to drain.

Next pour your wheat nuts onto paper towel or a hand towel and another on top to really dry them.

Pour into a bowl.

Heat oil on the stove on medium temperature.

When you place a wheat berry into the pot it will start to bubble when it’s ready, alternatively you can place the edge of a wooden spoon into the oil and it will also bubble when the oil is ready.

Now The Berries

Place the wheat berries into the oil 1/2 cup at a time.

If you’re pot is small, use 1/4 cup.

The wheat berries will cause the oil to bubble up and you want to be sure you have room for this without the oil spilling over.

Cook for 4-5 minutes or until the wheat berries come out crunchy like a corn nut or chip.

Place on paper towel and pat down, place into bowl.

Finally, add seasoning and mix through your wheat crunch.  Enjoy!

Keep in a sealable container.
