Roast Beef Hash Recipe
Ingredients
1 Rutabaga
2 Onions (white)
6 Carrots
Leftover Roast Beef or Roast Pork
Small Can of Beets
2 T Butter
Olive Oil
Salt, Pepper, Herbs & Balsamic Vinegar To Taste
Instructions
Heat oven to 400.
Peel and cube 1 rutabaga.
Toss on a cookie sheet with some olive oil, sea salt, pepper, and herbs such as rosemary or basil.
Roast for half an hour.
While rutabaga roasts, peel several carrots and cut into pieces.
Peel 2 onions and cut into chunks.
At the half hour mark, add to the oven and roast for another 15 minutes.
Meanwhile, cube leftover roast beef—roast pork works as well—and open a small can of beets. 5.
When the timer goes off, add to the cookie sheet along with more salt, pepper, herbs, perhaps a splash of balsamic vinegar, some of the meat broth if you have it, and a bit of beef juice.
Toss, then dot the whole thing generously with butter.
Roast for another 15 minutes or until it is all nicely browned and sort of melding together.
Put on plates and enjoy.
This feeds four of us with leftovers.
