Growing up, my Mother would make this no bake cherry Jello pie for Easter, or for any special occasion really.
I had forgotten all about it, until one day when I got a craving for it. I didn’t have the recipe written down, so I experimented with it, and my goodness, it has to be one of the easiest pies to make.
You only need a few key ingredients, and you too can make this delicious, cherry Jello pie.
What you will need:
- 1 pkg. Cherry Jello
- 1 – 500g container of 2% cottage cheese
- 1 cup boiling water
- 1/2 cup cold water
- 2 cups graham wafer crumbs
- 1/2 cup sugar
- 1/2 cup melted butter
Combine graham wafer crumbs, sugar and butter into a glass pie dish. Mix well and firmly pack around the pie plate. You want the mixture to come up the sides as well. Place in fridge to set.
In measure, add 1 cup of boiling water to the package of jello. Stir to dissolve.
Add in the 1/2 cup of cold water and set aside.
In a blender add the entire container of cottage cheese, and add in the jello liquid.
Blend on high until mixture in creamy and there are no chunks of cottage cheese.
Pour into prepared pie plate and refrigerate until set (at least 3 hours)
Serve with whipped cream or just on it’s own.
