The Best Leftover Meatloaf Recipes

If you have made more meatloaf than you are going to use, there are some great recipes you can make. You can make great dishes like hash, tacos and soup with your leftover meatloaf.

The Best Leftover Meatloaf Recipes

Meatloaf Hash

Ingredients:

2 cups of leftover meatloaf, diced

3 eggs, whisked

2 cups of potatoes, parboiled

4 tablespoons of butter

5 tablespoon of heavy cream

Salt and pepper to taste

Directions:

In a skillet, melt the butter and then add the meatloaf and potatoes. Fry for 20 minutes. Add in the eggs and cook 3-4 minutes. Remove from heat, add heavy cream and serve.

Meatloaf Panni Melt

Ingredients:

1 tablespoon of olive oil

2 red onions, sliced thin

8 slices of rye bread

4 slices of leftover meatloaf

4 slices of Swiss cheese

1 tablespoon of melted butter

Directions:

In a skillet on medium heat, add olive oil and onions. Sauté for about 30 minutes or until caramelized. Preheat your panni grill on medium-high heat. On a slice of bread, add some of the onions along with a slice of meatloaf and a slice of cheese. Add another slice of bread to finish the sandwich and brush a bit of butter on top. Grill for 4-5 minutes until cheese has melted.

Meatloaf Spaghetti

Ingredients:

16 ounces of spaghetti pasta, cooked

2-3 slices of leftover meatloaf, cut into pieces or cubes

1 26-ounce jar of pasta sauce

1/3 cup of water

½ cup of shredded Romano cheese

Directions:

Using a skillet, over medium heat, add the pasta sauce, the meatloaf and the water. Bring to a simmer, frequently stirring. Add the cooked pasta to a serving platter, top with pasta sauce and sprinkle with cheese.

Meatloaf Tacos

Ingredients:

1 tablespoon of olive oil

1 chopped onion

3 cups of leftover meatloaf, crumbled

1 tablespoon of cumin

½ cup of tomato sauce

6 taco shells

2 cups of cheddar cheese, shredded

2 cups of lettuce, shredded

1 cup of salsa

1 cup of sour cream

Directions:

Using a skillet over medium heat, add olive oil and onions, sautéing for 6-7 minutes or until tender. Add in meatloaf, cumin and tomato sauce and simmer for 12 minutes. In each taco shell, add meatloaf mixture and top with lettuce, cheese, salsa and sour cream.
