Pair with a simple side salad and you have a well balanced meal. If you need an extra kick add a bit of hot sauce to the glaze.

Kentucky BBQ Glazed Pork With Roasted Red Peppers
Makes 8
Ingredients
1lb pork cutlets, cubed
One tablespoon Olive oil
A teaspoon of onion powder
Then 1 teaspoon garlic powder
And 1 teaspoon paprika
1/2 cup Kentucky BBQ sauce
1 teaspoon honey
1 red pepper
8 soft flour tortillas
fresh greens (like spring mix or arugula)
Instructions
Preheat the oven to 425
Add the pork, olive oil, garlic powder, onion powder, paprika, salt & pepper to a bowl. Mix to coat all the pork
Spread the pork cutlets out onto a sheet pan. Brush with half of the BBQ sauce.
Place in the oven and cook for about 8 minutes.
Remove the stem and seeds from the red pepper.
Slice into thin strips and place on a sheet pan.
Drizzle with honey, sprinkle with a pinch of salt & pepper.
Place in the oven.
Roast the peppers in the oven with the pork for another 10 minutes or until pork is cooked through.
Note* Brush pork with remaining BBQ sauce every couple minutes to gain a sticky, glazed finish!
Layer pork and red peppers inside of soft flour tortillas and top with fresh greens and a drizzle of the BBQ sauce.
