Hot Chocolate Cookies

My Hot Chocolate Cookies recipe happened a bit by accident. I really wanted to bake and got my kids excited to bake with me.

My Hot Chocolate Cookies recipe happened a bit by accident. I really wanted to bake and got my kids excited to bake with me.

I quickly realized I did not have half the ingredients I needed to make chocolate cookies but I did have hot chocolate mix.

Hence, the Hot Chocolate Cookie recipe was created.

Like all of the recipes I make this one does not need to be exact.

Ingredients  

  • 2 cups All Purpose Flour
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 cup Butter or Margarine
  • 1/2 cup White Sugar
  • 1/2 cup Brown Sugar
  • 2 Eggs
  • 2 packages Hot Chocolate Mix
  • 1 tsp Vanilla Extract
  • 1 cup Chocolate Chips

How To Make Hot Chocolate Cookies

  • In a small bowl mix together flour, baking soda and salt.
  • In a separate bowl cream butter with sugars. Add eggs and beat until light and fluffy. Mix in hot chocolate mix until mixture is smooth with no lumps. Add in vanilla.
  • On low speed, beat in flour until just incorporated and mix in chocolate chips.
  • On an ungreased baking sheet drop batter in teasoons, 1 inch apart. For very large cookies use a heaping tablebpoon 2 inches apart. Bake in an oven 350 degrees for 10 minutes. Remove from oven and after 2 minutes transfer to a cooling rack.
