Green Salad Recipe with Homemade Honey Mustard Dressing

I am a big fan of serving a green salad with dinner. Its a great way to eat dark leafy greens, and maybe some other fruits and veggies. I love to use new ingredients to change things up. Sometimes there are more vegetables than fruit and sometimes I toss in some nuts and make a fresh dressing. But this green salad is by far my favorite! Mixed greens tossed with grapes, apples, dried cranberries and blue cheese and then topped with a creamy homemade honey mustard dressing. Serve on the side with pasta, or add some grilled chicken to it and call it a dinner salad.

Green Salad Recipe with Homemade Honey Mustard Dressing

What you will need: Makes 2 green salads

  • 2 – 3 cups fresh mixed green salad; divided 
  • 1 golden delicious apple; cored and diced
  • 12 grapes; sliced in half
  • 1/4 cup dried cranberries
  • 1 stalk of celery; split lengthwise and diced
  • 2 Tbsp. blue cheese; in chunks
  • 2 Tbsp. mayo
  • 1 Tbsp. honey
  • 1 Tbsp. prepared yellow mustard
  • dash of pepper

In a small bowl mix together the mayo, honey, mustard and pepper. Set aside.

Place greens into bowls and divide fruit and veggies between them. 

Add the cheese and top with the honey mustard dressing.

Enjoy!
