One of our family favorite desserts is fresh Strawberry Cake with Strawberry Buttercream because it just screams “summer is here”.
Obviously we are a little early publishing this recipe to use fresh home grown Strawberries.
We want to give you some time to print the recipe and hang it on your refrigerator to create some excitement in your home!

Ingredients:
1 1/2 cups cake flour
4 eggs
1 1/2 cups all purpose flour
1 3/4 cups sugar
2 1/2 tsp. baking powder
1 tsp. salt
1 cup butter, chilled, cut into small cubes
3/4 cup milk
1 1/2 cups washed, hulled fresh strawberries, pureed to approx. 3/4 cup
1 tsp. vanilla
Directions:
Preheat oven to 350 degrees F. Then, prepare two 8 inch cake pans, use soft butter or shortening to lightly coat pans and then dust pans with flour.
In a large bowl or bowl of stand mixer, combine the flours, sugar baking powder and salt.
Mix in butter until crumbly. Mix in eggs, one a time until blended.
In another bowl, mix milk, strawberry puree and vanilla. Then, slowly add the milk mixture until blended and smooth.
Divide cake batter into the two cake pans.
Bake 30 -35 minutes, until toothpick inserted into the middle of cake comes out clean,
Cool cake pans on wire rack,
Remember, cakes must be completely cool before frosting,
Frosting:
1 cup(2 sticks) unsalted butter, room temperature,
3 1/2 cups powdered sugar(icing sugar),
1/2 tsp. vanilla,
1/2 cup fresh strawberries, washed, hulled and pureed to approx. 3 tbsp.,
Now beat butter until light(almost white) and fluffy.
Slowly add powdered sugar, mix until blended.
Finally the last step, add vanilla, mix, Add strawberry puree and mix, until well blended.
Children of all ages to lick the beaters,
Frost Cake:
Serve as is or top with some fresh sliced strawberries
