Fancy Date Night Pizza

This is one of our favorites which can, of course, be adapted to suit your taste!

I served it for Valentine’s Day on our wedding china, and it made for a nice presentation.

Since it was a date for just the two of us, we didn’t have to worry about whether the kids would eat it (ours only eat Hawaiian!)

One nice thing about recipes like this is that you can really stretch an expensive ingredient like steak.

Ingredients

One frozen pizza crust or a batch of your favorite recipe
Olive oil
Minced garlic or garlic powder
1/2 lb. steak
Balsamic fig vinegarette (I used Stonewall Kitchen’s)
1 small onion, sliced thin
1 handful chopped fresh spinach, tough stems removed
1/2 red pepper, broiled until skin bubbles and then chopped
Marinara sauce (optional)
8-12 oz fresh mozzarella

Directions

1. Thaw dough if using frozen or prepare according to recipe.
2. Cover steak in balsamic fig marinade for at least half an hour.
3. Preheat oven according to dough instructions
4. Spread dough on large pizza pan. Brush with olive oil and sprinkle with the garlic.
5. Spread sauce on dough if using–I love white pizza, and I like marinara if I do use a red sauce.
6. Heat skillet (I love cast iron) and sear steak in a little olive oil. Remove and slice into thin pieces. Scatter on pizza.
7. Lower pan temperature to medium and cook thinly sliced onion until softened. Scatter on pizza.
8. Toss spinach and red pepper pieces onto pizza and finish with shredded or torn fresh mozzarella.
9. Cook according to crust instructions, usually about 20-30 minutes.

Tip

Use more or less of each topping to suit your taste for your personalized fancy date night Pizza.

Other things I have included at times are sauteed mushrooms, fresh basil or oregano, and spoonfuls of ricotta under the mozzarella .

I am not really a wine drinker, but I feel like a glass of something with this would really take it up a notch–I’d love to hear your expert pairings!
