English Muffin Bacon Cheddar Breakfast Pizza

English Muffin Bacon Cheddar Breakfast Pizza

My mom used to make a variation of this English Muffin Bacon Cheddar Breakfast Pizza recipe for brunch on Sunday. It was always a special treat and insanely easy to make. This recipe can be adjusted to serve more, the recipe below is based on 4 pizza’s. I remember the family hanging out in the kitchen waiting for Mom to take her eyes off the bacon so we could snatch a few pieces. We always thought she didn’t notice – why did she fry up a whole pound of bacon when only a few strips of bacon are needed? It was always fun to hang out and talk to the family about whatever was going on in the neighborhood or the world that week. 

Ingredients:

2 english muffins

one egg

1/2 cup milk

1/2 cup shredded cheese

2 strips bacon, cooked crispy

English Muffin Bacon Cheddar Breakfast Pizza

Instructions:

Preheat the oven to 400 F

Whisk the egg and milk together.  Cut the English muffins in half. Place on a cookie sheet.

Slowly pour the egg over the English muffins, use a fork to spread it around and let it soak in.

Top with shredded cheese and crumbled bacon.

Bake on 400 for 10 minutes or until crispy.
