This is a super Easy Creamy Chicken and Corn Chowder Soup recipe that can be made quickly.
I added a tip at the bottom to show you how you can make it in the slow cooker (Crock Pot).

Easy Creamy Chicken And Corn Chowder Soup Recipe
Ingredients:
2 Tablespoons butter, divided
One Teaspoon Italian Blend Seasoning
2 Medium Sized Potatoes, diced – we probably should have called this Potato Corn Chowder ????
One bay leaf
½ Small onion, diced
One Can Cream Style Corn
3 Cans of Milk (use the empty soup can to measure) Milk measurement may vary due to variation in size of potatoes, onion etc. You may need to add more. If you want a creamy soup then Including potatoes in this recipe thickens the soup without using heavy cream.
One Can Whole Kernel Corn (Option: Fresh Corn or Fresh Sweet Corn and simmer with the corn cobs that have been stripped of corn in the pot)
One Can Cream of Chicken Soup
½ Rotisserie Chicken Pulled apart and chopped (Option: add chicken broth to taste and desired thickness)
Option: Everything is better with bacon . . . cook bacon until crisp
Vegetarian Option (next time): Delete Chicken and Bacon and add 1 red bell pepper, 2 celery ribs (chopped) and 4 scallions (green tops and bulbs chopped)
Salt and or Black Pepper to taste
Instructions:
In a soup or stock pot over medium heat, add 1 tablespoon butter, diced onion, Italian Seasoning and diced potato.
Then saute until tender (about 5 minutes).
The potato will partially break down and create a starch that will help thicken the chowder.
Next, while that cooks, pull apart and chop the chicken. Add to the pot and mix well.
Add the cans of soup and corn, mix well.
Use an immersion blender (so you don’t need to remove the soup from the pot) and blend the soup.
Stir in the milk and last tablespoon of butter. And if you decided to add bacon – drop it in.
Salt & Pepper to taste.
Let the chowder cook on medium, stirring occasionally for about 10 minutes.
Almost done, reduce to low and simmer for another 5 minutes or until ready to serve.
TIP* Crock Pot Version
Now, follow the steps above to cook the onions and potatoes, then add all the ingredients to a crock pot.
Finally, turn heat on low for 1-2 hours, reduce to Keep warm. Eat all day!

I tried this last night! It was absolutely delicious and even my ten year old twins loved it. They said it was one of the best things I have ever made. So easy, it only took 30 minutes from start to finish! This is definitely going to be a standard in my house! Good enough to serve to company and so hearty it fills you right up! I served it with dinner rolls and it was perfect. Thanks for the recipe!!
How much does this recipe make? Debating on whether or not I have to double… making for a big family dinner tomorrow!
Would love to add this to my usual thanksgiving feast but there is just never enough time to add a chowder on top of everything else…well…enough time but not enough counter space. I will be trying out this recipe on other occasions though. Great cold day meal.

can you not add the condensed soup and if so what do you substitute if anything?
You can experiment to taste. Typically condensed soup saves you time.
