Easter nest cookies add some colour and fun to the Easter season.
With spring and Easter just around the corner….who am I kidding…..
I like to think that winter will come quickly to a close so to help it along, I will share this recipe.
It is a fun kid friendly recipe that I happily had my Littles join me in preparing.
Easter Nest Cookies Recipe
Our kids love this recipe and it has become a tradition in our family over the years.
Ingredients:
2 1/2 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter softened
1/2 cup vegetable oil
1 1/2 cup sugar
1 egg
1 teaspoon vanilla extract
Various colours of sprinkles
1 package of premade white icing (if you are feeling ambitious, you can make your own)
1 large package of Cadbury Mini Eggs or Jelly beans
Instructions:
Preheat oven to 350 degrees
With an electric mixer, combine butter, sugar and oil. Add the egg and vanilla.
In a medium bowl, combine flour, baking soda, baking powder, and salt and mix them together.
Slowly add the flour mixture to the wet ingredients and mix on slow.
Roll into 1 inch balls.
Roll balls in sprinkles and place in well greased muffin tin.
Use thumb or small spoon to flatten and make an indent in the balls.
Bake the cookies for 11-14 minutes until beginning to harden or crack on the top.
Allow to completely cool.
Fill cookie indent with white icing.
Allow little hands to add the eggs or jelly beans.
