As a young girl these little cookies were the one type of baking my Ma would rock at and now my own daughters get to enjoy my updated version of this delicious watermelon cookies recipe!

Delicious Watermelon Cookies Recipe

Ingredients:
3/4 cup butter
3/4 cup sugar
1 egg
1 tspn vanilla
2 cups flour
1/4 tspn baking powder
1/2 tspn salt
red food coloring
half cup chocolate chips
one half cup butter
half tspn salt
1 tspn vanilla
1 cup icing sugar
green food coloring
sprinkles
Preparation:
Cream the butter and sugar together.
Add the egg, then the vanilla.
In a separate bowl sift the flour, baking powder and salt together.
Add the dry ingredients into the wet ingredients (you could add the food coloring to the wet ingredients to make it easier!), add the food coloring and knead dough until the coloring is smooth through the dough.
Shape into a log and wrap in plastic wrap, place in fridge for one hour
Tip:
You could also roll into a log with the diameter you want you cookies, then simply cut into 1″ circles when ready, then cut into halves! Otherwise move on to the next step!
Remove dough and leave on counter for five minutes.
Preheat oven to 350*
Roll dough out to 1″ thick and use cookie cutter or flour dipped cup to cut circles out.
Cut into halves and place on cookie sheet.
Add the chocolate chips to replicate the seeds of the watermelon!
You can use black currants, sesame seeds or sprinkles!
Bake for 9-11 minutes.
Cool on wire rack.
To make the icing mix the butter, salt, vanilla, icing sugar and green food coloring together.
You don’t want it too thick or it’s harder to stick smoothly to the cookie.
Add a touch of milk if you need it thinner!
Roll the “rind” edge (circled edge) of the cookie through the green icing, then roll it in the green sprinkles.
