Cookie butter is a staple in many households overseas and for good reason.
It’s delicious, smooth, creamy and can be put on almost anything you can think of! Toast, cupcakes, apple slices…the list goes on!
If you’ve never tasted cookie butter you are most definitely missing out.
The best part about it is that you don’t have to go overseas to get this delicious topping, you can make it at home in your own kitchen with items you probably already have on hand in minutes!
Delicious Homemade Cookie Butter Recipe
30 cookies of your choice, I prefer a sugar cookie based cookie
2 teaspoon brown sugar
1 teaspoon vanilla extract
2 tablespoons milk or soy powder
1/4 cup water
2 tablespoons coconut oil
pinch of salt
Place all the cookies in a food processor and pulse until the cookies are a fine dust.
Mix the milk powder with the water and whisk with a fork until fully combined, set aside.
Add the sugar, vanilla, milk water, coconut oil and salt to the cookie dust.
Process on low for two minutes until it’s thick and creamy then turn it up to high and process for an additional two minutes.
If your cookie butter is a little too thick for your liking feel free to add a little more water one teaspoon at a time to thin it out until you have reached your desired consistency.
Place into a resealable jar.
Does not need to be refrigerated.
Good for up to 6 months.
