Breakfast Bagel Sandwich

This delicious Breakfast Bagel Sandwich is an easy and perfect recipe for a fast on-the-go meal in the morning! Mornings are hectic around our house and this breakfast bagel sandwich is just what I  need since I don’t usually get a chance to sit down and eat breakfast until after I drop the boys off at school.  I am usually hungry, but also in a hurry, and a quick and easy meal is exactly what I need. 

This quick and easy breakfast bagel sandwich sure hits the spot. Crispy bacon, and a soft cooked egg, on a fresh bagel with mayo and cheese. It’s a variation of a classic fried egg sandwich, but rather than being on bread, it’s on a bagel and I added bacon because everything is better with bacon.  It’s easy to adapt this to suit your preferences.  If you prefer a hard cooked or even scrambled egg, you can easily make it that way instead! 

Breakfast Bagel Sandwich

While I just make this easily on my stovetop, you can invest in a breakfast sandwich maker.  I find it to be a bit more than I need in my kitchen, but if you are making a lot of these it might b a great choice for you.  

What you will need: Makes one sandwich

  • 1 bagel; I used plain
  • 1 egg
  • 2 strips of cooked bacon
  • 1 slice of cheddar cheese or mozzarella
  • 1 – 2 Tbsp. mayo

If you are going to add bacon, you can use some you already have cooked, or fry a few pieces prior to cooking your egg.  If you fry the bacon in a skillet, you can easily use the bacon grease to fry your egg in.  This may seem like a lot to some, but it is a classic method of preparing an egg for many.  Otherwise, you can use my preferred method of frying in a bit of butter. 

In a frying pan, fry your egg to your liking. I prefer to do this in a non-stick skillet, or even a cast iron skillet with a bit of butter to keep it from sticking.  A classic soft cooked egg only takes a maximum of 2-3 minutes on medium heat and typically is not flipped to cook both sides.  A hard cooked egg may be flipped once and require 3-4 minutes cook time on medium heat.  I also prefer to crack my egg in a bowl and sprinkle with salt and pepper there before pouring into my skillet.  This helps the seasoning cook into the egg and for me produces a better tasting sandwich overall. 

Top your egg with cheese of your choice to melt a little just before removing from skillet.  This makes your bagel sandwich even more delicious.  Spread your mayonnaise onto both sides of the toasted bagel, place your bacon on the bottom, then your egg and top with the other half of the bagel. 

This creates a classic and delicious breakfast bagel sandwich that everyone will enjoy!

Ingredients

Instructions
