Birthday Party Sprinkle Cake Recipe

All kids love the look of a white cake full of colorful sprinkles, but not many parents like the thought of giving their kids a cake out of a box.  This recipe is made from scratch and comes through on flavor and looks!  You will never go back to the boxed sprinkle cake after trying out this light and fluffy recipe!

Cake
1/2 cup butter
1/2 cup vegetable oil
2 cups white sugar
2 3/4 cup all purpose flour
1 tspn salt
1 tspn baking powder
5 eggs, room temperature
4 tspn vanilla extract
1 cup milk
4 tablespoons sprinkles

Preheat oven to 350*
Butter two circle cake pans and coat with flour, tap out excess flour.
In a stand mixer, add the butter, oil and sugar.  Mix on medium speed until it becomes fluffy and frothy, about five minutes.
Beat in the eggs, one at a time, until fully incorporated, then add the vanilla.  Mix until smooth.
Add the flour, salt and baking powder in a separate bowl and get your milk ready.
Add 1/3 of the flour to the cake batter and mix through, then 1/2 of the milk and mix.  Repeat until all is incorporated and batter is smooth.
Lastly, add the sprinkles!  The more colors the better!
Bake your cakes side by side in the oven for 35 minutes or until the top is golden brown and a toothpick comes out clean.

Cool your cakes on a wire rack.  While cooling make your icing.

Icing
1 cup butter
3 cups icing sugar
1 teaspoon salt
2 teaspoons vanilla extract
1/4 cup milk

Whip all the ingredients together in a stand mixer until fluffy.

To ice your cake!  It’s much easier to ice a cake that has been partially frozen, to do this just place your cakes in the freezer for about 15 minutes.
Remove from freezer and cut the top of the cake off using a long knife, this will ensure your cake comes out flat and stacks easily.
Place approximately one cup of the icing on the lower portion of the cake and smooth over the top of the cake.  Place the second cake (top removed) on the icing and add the rest of the icing to the top of the cake.  Working from the middle out to the edge, then pushing the icing down the sides of the cake, ice your whole cake.
Use more sprinkles to add to the outside of the cake for a touch of extra awesomeness and fun!
