This Best Ever Chicken Fried Rice Recipe is a true comfort food for me.

It’s so easy to throw together, and it’s a full meal.

Bits of chicken, scrambled egg… fresh carrots and peas.

What’s not to love!

I had some leftover chicken kickin’ around in the fridge and needed to make dinner, so I threw this simple dish together, and called it dinner.

This recipe really is the best ever homemade chicken fried rice recipe. 

 

Best Ever Homemade Chicken Fried Rice Recipe

If you don’t have leftover chicken, you can cook a breast or two up, or some thigh meat.

Also, having the rice cold is best, but I don’t always do that, so just go for it.

 

This Best Ever Chicken Fried Rice Recipe is a true comfort food for me.

What you will need:

  • 3 cups cooked rice; cooled
  • 2 cup shredded cooked chicken
  • 1 medium onion; diced fine
  • 1/2 cup diced carrots
  • 1/2 cup frozen peas
  • Two eggs’ beaten
  • 2 Tbsp. sesame oil
  • 2 Tbsp. soy sauce

Directions:

In a wok or frying pan heat oil over medium heat.

Saute the onions, carrots and peas together until the onions turn translucent. 

Move the veggies over to the side of the pan and add the egg mixture in.

Cook the egg and then scramble it in the pan. Mix together.

Add in the chicken and rice and stir to combine.

Season with the soy sauce and serve hot.
