Plump strawberries, gorgeous blueberries and don’t forget raspberries and blackberries.

If you head to your local farmers market you can find these fresh picked and ready to go.

Nothing scream Summer more than fresh berries.

I decided to try my hand at some strawberry scones.

I had some gorgeous ripe farmers market strawberries that were almost too ripe, so I whipped up a batch of these very berry strawberry scones.

They take no time really to make, and pair beautifully with a cup of coffee in the morning or a scoop of ice cream for dessert.

 

Very Berry Strawberry Scones

What you will need: 

  • 2 cups all-purpose flour
  • 1/3 cup sugar
  • 3 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 cup + 1 Tbsp. chilled butter
  • 2/3 cup buttermilk
  • 1 tsp. pure vanilla extract
  • 1 cup fresh, ripe strawberries; chopped

Preheat your oven to 400 degrees F and line a baking sheet with parchment paper.

Combine flour, sugar, baking soda and baking powder together. Cut in chilled butter until it resembles coarse crumbs.

Add in diced strawberries and coat. 

Mix together the vanilla and buttermilk and then add to dry ingredients. Mix until a dough is formed.

Turn out onto floured surface and form a disk about 1 inch thick.

Cut into 8 pieces, place on baking sheet and bake for 15 – 20 minutes. You want a light golden brown edge. 

Cool on wire rack and store in an airtight container for up to 5 days.

I can make these in about 30 minutes 

The boys love to help me bake, so this would be a great time to get the kids involved.

Try making these with blueberries and lemon, or raspberry and lemon.

You can make a drizzle to if you like. Mix together 1 1/2 cups of powdered sugar, 2 Tbsp fresh lemon juice, and 3 Tbsp. milk.

Drizzle away! 

These fresh, homemade strawberry scones will be a big hit – they didn’t last long in our home.
