Unicorn Cupcakes Decorations

Ingredients

1 box french vanilla cupcake mix
2 teaspoons vanilla
1/4 cup sprinkles, any color
white modeling chocolate
cornstarch
food coloring
edible glitter or luster dust

Make the white modeling chocolate a few hours ahead of time.

Make your cupcake batter according to the manufactures instructions.

Add in the additional vanilla and mix through.

Add the sprinkles and mix them into the batter by hand.

They may begin to melt, don’t worry about this!

The coloring will still show up in your cupcakes.

Bake according to the manufacturers instructions.

While they are baking you can get to work assembling the unicorns features.

For these cupcakes you will be making the ears and unicorn horn.

First take a small piece of the modeling chocolate and roll it on the counter or between your hands to create a long thin rope.

You can do this in smaller ropes and it will work just as well.

Cut each rope to be approximately 3″ long and fold in half.

Starting at the place where the chocolate is bent in half twist the two sides together to create a spiral horn.

Add Color

To add color simply dip a paint brush into your food coloring and paint the horns your chosen color.

Dip each one into the luster dust or edible sparkles and set aside and allow to dry and harden.

If you find your hands getting warm and melting the chocolate dust your surface and hands with the cornstarch.

To make the ears roll out your modeling chocolate into long strips about 2.5″ wide.

Cut each strip into triangles.

Pick up a triangle and pinch the pointy tip off the top and round out into an ear shape.

Using a paint brush and more food coloring color the inside of the ears by painting the middle of the ears.

Lay down on a flat surface to dry and harden.

Once the cupcakes have cooled it’s time to ice them using two food colors that compliment your Unicorn Cupcakes Decorations horn and ear colors.

Icing

1/2 cup butter
4 cups icing sugar
3 teaspoons vanilla
2-4 tablespoons heavy whipping cream
food coloring

Mix the butter, vanilla and 1 cup of the icing sugar together in a stand mixer.

Mix on low until the sugar is fully incorporated then turn it up to high for 3o seconds.

Reduce the speed to low and add the icing sugar one cup at a time alternating with 2 tablespoons of the heavy cream.

If you’ve added all the icing sugar and you find your icing is too thick add in more whipping cream 1 tablespoon at a time until your desired thickness is achieved.

Divide your icing into 2 bowls and add your food coloring.  Mix through.

Get a piping bag fitted with your chosen tip and layer the icing colors on top of each other in the bag.

Pipe onto your cupcakes.

Add the ears to the cupcakes by pushing them into the icing.

To add the horns use a chopstick and push it into the cupcake between the ears, but slightly more to the front, and twist.

This creates a hole to place the horn into.
